Most Extra Virgin Olive Oil (EVOO) is a blend (or coupage) of several types (or varieties) of olive oils. Single Varietal EVOO, like this one produced solely from Picual olives, is the purest olive oil, mechanically cold pressed from only one variety of olive and from only one olive grove (with absolutely no additives or modifications).
The great advantage of single varietal EVOOs is the much higher content of active ingredients and nutritional value which provide the enormous health and medical benefits of EVOO. Each variety of olive also has a very distinctive and characteristic strength, intensity, flavour and aroma.
The fully integrated production process all takes place on the estate and is totally controlled, ensuring the highest quality standards for the EVOO. Each and every bottle produced is identified allowing for full traceability, which means where the olives came from, when they were harvested as well as all stages of the production, processing and distribution process can be fully identified and traced.
The estate has received more than 60 international awards.
Picual EVOO has high levels of polyphenols (organic compounds which are known to have antioxidant effects) as well as other natural antioxidants. By the way, less than about one quarter of the harvest each year qualifies as EVOO.
Picual EVOO is prized for its high stability (resistance to oxidation) which gives it great resistance to high temperatures, making it ideal for all forms of cooking and preserving raw or cooked foods.
Picual olive oil can contain up to 80% monounsaturated oleic acid, which helps prevent cardiovascular and liver diseases, and only 4% linoleic acid.
FLAVOUR & AROMA – INTENSE / ROBUST
Picual EVOO has a great intensity and characteristic full body. Fruity green olive scores, a light peppery and bitter olive leaf taste can be appreciated in this EVOO.
It has a distinctive and classic bitterness as well as a spicy aftertaste providing it with a great personality.
Picual EVOO´s intense flavour with tinges of wood and freshly cut herbs, combined with the aroma of herbaceous fruits such as the olive tree, the fig tree and the tomato gives it its strength and body.
Picual EVOO´s intensity enhances the flavour of hams, sausages, cured beef and cheese. It can also be used both in salads and meat marinates. It maintains its properties even at high temperatures, making it ideal for frying foods. It is excellent for breaded and battered food cooking.
Picual EVOO is also perfect for making slow stews and use with canned raw or cooked foods. It reinforces the traditional flavour of fried dough foods (sweets and desserts typically fried), and in confectionery it can replace butter in many traditional sweets such as muffins.
