Heather honey (also known as Ling, Calluna, Summer or Autumn Heather honey) is harvested in very limited quantities as it is very costly and difficult to extract. It is a honey that is harvested at an altitude of 1200+ meters in the Picos de Europa Natural Park (Leon, Spain) between the months of August and October from the Calluna Vulgaris plant of the Ericaceae family.
This dark, mono-floral raw honey is highly prized by connoisseurs and is often referred to as the “Rolls Royce of honey”. A number of studies have demonstrated it is one of the very best honey varieties in the world. Some properties are even better than other dark honey varieties, including Manuka honey (Leptospermum scoparium).
It has an amber to dark amber colour with a very persistent aroma of fallen leaves and an autumn forest. It leaves a sweet taste on the palate with bitter and salty notes and a gelatinous sensation due to its high viscosity.
Most types of honey are Newtonian liquids, but a few types have non-Newtonian viscous properties. Heather and Manuka honey display thixotropic properties. These types of honey enter a gel-like state when motionless, but liquefy when stirred. It has a medium crystallization rate.
Heather honey is rich in phenolic acids (in fact, its TPC – Total Phenolic Content – is the highest of any honey) and flavonoids which exhibit a wide range of biological effects and act as natural antioxidants. It also has very powerful antibacterial and antimicrobial properties due to the enzymatic production of hydrogen peroxide.
Its protein and mineral salt content is very high as well, surpassing any other honey of floral origin. Its mineral wealth gives it unmatched attributes in the treatment of anemia and fatigue. It is ideal to combat lack of appetite and also favours the recovery of heart conditions. The antioxidants in Heather honey influence skin cells, helping to eliminate free radicals. This slows cellular deterioration and helps maintain a youthful appearance for longer. For this reason it is often used in skin care products.
