Nose: High intensity, hints of red, fresh and ripe fruit on a slightly dairy background.

Origin

Calles (Alto Turia, Spain). The wine has the designation of Valencia PDO (Protected Designation of Origin). The vineyards are located in alkaline-clay soils at an altitude of 600 m above sea level, the highest in the region, offering the many benefits of high-altitude wines together with our Mediterranean character.

Vintage conditions

We select the best Merlot grapes from our vineyards at their optimum ripeness. We harvest at night to take advantage of the cooler temperature, preventing oxidation during harvesting process. Our hopper trailers go straight from the vineyard to the winery.

The harvest arrives overnight at the winery and we proceed with the stemming and crushing. We then apply liquid CO2 at -30ºC to cool the grapes to 10°C and prevent oxidation in the must.

We macerate lightly at 10°C and gently press. Only the clean must is taken to ferment at a temperature of 16°C by adding our selected yeasts.
