Taste description

Origin

Calles (Alto Turia, Spain). The wine has the designation of Valencia PDO (Protected Designation of Origin). The vineyards are located in alkaline-clay soils at an altitude of 600 m above sea level, the highest in the region, offering the many benefits of high-altitude wines together with our Mediterranean character.

Vintage conditions

We select the best Merlot grapes from our vineyards at their optimum ripeness. We harvest at night to take advantage of the cooler temperature, preventing oxidation during harvesting process. Our hopper trailers go straight from the vineyard to the winery.

The harvest arrives overnight at the winery and we proceed with the stemming and crushing. We then apply liquid CO2 at -30ºC to cool the grapes to 10°C and prevent oxidation in the must.

We macerated for 3 days at 12°C with frequent pumping over and, once the fermentation process has started, we let the temperature increase to 28°C to get the colour and deplete the sugar. We use our own selected yeasts. We micro-oxigenate the wine to stabilize the colour after which the wine goes through the malolactic fermentation in vats with our own selection of lactic bacteria.
