Bee Bread is a unique product made up of pollen, honey, propolis and various enzymes added by bees that transform the product through lactic fermentation. It is the main source of protein for adult bees and their larvae. It is up to three times more nutritious than pollen, being the most unknown product of the bee hive but also the most complete as it is a great source of energy.
The bees arrive at the hive loaded with pollen, which they shed and compact inside the cells. They lay a thin layer of honey and then another layer of pollen, repeating this process until they fill the honeycomb cell. Once the entire cell is covered with honey and pollen, lactic fermentation of the mixture will take place over the following days. This chemical process involves a series of changes in the biochemical composition of pollen, such as the increase in soluble proteins and free amino acids. It also favours a better preservation of the product due to the acidification produced by the lactic acid.

This artisan Bee Bread is produced by one of the oldest beekeeping families in Spain. Since 1860 five generations of beekeepers have been passing on a deep love of nature and an admiration of the world of the bee to bring us the magic and health benefits of bee bread. It was in 1944 that the beekeeping activity became a full time business, initiating at the time the transhumance of beehives across Portugal and Spain including a number of national parks (transporting beehives from one location to another). This results in bee products of extremely high quality with clearly defined flavours and aromas as well as some very unique properties. It is quality certified and international award-winning.
