BACKGROUND

Our Limited Family Selection is a selection of the best of the best pure raw honey carefully hand-picked from the latest honey harvest. It has been carefully selected by the 5th generation of beekeepers, Rafael , and by his son,  Ivan, to offer raw honey that stands out for its superb quality, special properties and characteristic flavours that make it very unique.

The family’s tradition and experience dates back to 1860, when it began with traditional corks in the Sierra de Francia (Salamanca, Spain) passing on knowledge and know-how from generation to generation. Rafael began migratory beekeeping moving his bee hives to different apiary locations across the country to facilitate pollination of plants and forests, close to excellent nectar sources. The result is a range of very high quality varieties of unheated, unfiltered, unprocessed, cold-spun 100% pure raw honey very much appreciate by those who have the pleasure of trying it.

His son, Ivan, contributed and influenced the raw honey industry in Spain with technical changes such as introducing the vertical bee hive concept and producing the first bee bread in Spain. He also moving the family´s central office and main production facilities to Madrid, incorporated the latest packaging technology.

The result is a collection of superb world-class pure raw honey varieties with exceptional properties, unique flavours and aromas that make it a pleasure for the senses as well as providing excellent health and medical benefits.

ENVIRONMENTAL VALUE

In addition to harvesting very high quality honey the family proudly contributes in a significant way to the expansion of biodiversity and improving the health of the ecosystem by promoting pollination in national park forests such as the Tajo International Natural Park and the Picos de Europa National Park.

THE SELECTION

Amongst all the different types of honey collected by the family, they have chosen two that stand out because of their very unique properties.

RAFAEL’S HEATHER HONEY – one of the very best honey varieties in the world

Rafael chose Heather honey (Calluna), a honey which is harvested in very limited quantities as it is very costly and difficult to extract. It is a honey that is harvested at an altitude of 1000-1200 meters in the Picos de Europa Natural Park (Castilla & León, Spain) between the months of August and October from the Calluna Vulgaris plant of the Ericaceae family.

Heather honey (also known as Ling, Calluna, Summer or Autumn Heather honey) is highly prized by connoisseurs and is often referred to as the “Rolls Royce of honey”. A number of studies have demonstrated it is one of the very best honey varieties in the world. Some properties are even better than other dark honey varieties, including Manuka honey (Leptospermum scoparium).

It has an amber to dark amber colour with a very persistent aroma of fallen leaves and an autumn forest. It has a sweet taste on the palate with bitter and salty notes and a gelatinous sensation due to its high viscosity. It is rich in phenolic acids, flavonoids, minerals and hydrogen peroxide providing powerful antibacterial action, unique healing properties as well as a wide range of positive biological effects and it is a natural antioxidant.

Heather honey has an unusual texture, being a jelly until stirred, when it becomes a syrup like other honey, and turning again to a jelly. Most types of honey are Newtonian liquids, but a few types have non-Newtonian viscous properties. Heather and Manuka honey display thixotropic properties. These types of honey enter a gel-like state when motionless, but liquefy when stirred.

IVAN’S LAVANDER HONEY

Ivan chose Lavender honey, a honey that is harvested in August in the lavander fields. The lavender flower is in the Lavandula genus and part of the Lamieaceae family. It is harvested from the extensive fields of lavender in Castilla & León, Spain at 900 meters above sea level. Essential lavender oil is also distilled from these flowers to make some of the best perfumes in the world. The bees produce a true honey essence, a light-coloured honey with unique properties. If we close our eyes, its aroma wakes up all our senses transporting us to the lavender fields where it originated. Its sweet and peculiar taste, sometimes with acidic notes, does not leave anyone indifferent and its crystallization makes it possible to see it as white or light amber.

AWARDS

Both Natural Raw Heather & Lavender Honey varieties won GOLD and PLATINUM quality awards respectively in the international competition LIHA (London International Honey Awards). Even the packaging received an award!
